Civil roasts its own Mexican single origins by state (Oaxaca, Chiapas, Guerrero), with lots like the Mico de Noches from Chiapas printing varietal, process, altitude and region, though no farm name, producer or roast date appears anywhere. Cafe service is espresso and batch only; no pour-over, V60 or Chemex is offered.

The downtown room is a glass box Stumptown left behind: floor-to-ceiling windows on the corner of 8th and Los Angeles, high ceilings, curving gold accents, and a U-shaped bar. Civil calls it a bright jewel box, which is self-description a room this glassy can actually carry.
