Starbucks bought the Diedrich retail chain and closed Martin's first full-scale coffeehouse at this address in September 2008; the family stripped the buildout out and reopened the room as their own the following spring. A Diedrich roaster runs in the front window now, Stephan's build, and this bar pours a $5.95 pour-over the Newport Beach room does not.
The coffee
All roasting happens on site: three Diedrich roasters, built by Martin's brother Stephan Diedrich in Sandpoint, Idaho, with one working the front window here, running 10 to 20 minutes at 425 to 475 degrees, and Martin cups samples with the team weekly before settling the lineup. The Tustin menu lists twelve single origins named to country, growing region, and process — including a $60 Hawaii Ka'u — plus Golden Mean and Carl's Blend for espresso, though no listing prints a roast date or varietal.
The family stripped the Starbucks buildout out of this address and rebuilt on French limestone and rustic American hickory, with green marble counters, historic iron building stars set into the counter fronts, and a Fortuny silk lamp carried back from Venice. Taking back the room where Martin Diedrich's first coffeehouse stood was the point, and they redid it in materials that make the old tenant unimaginable.
