Mad Lab roasts downtown in small batches, and the Ethiopia Guji Kalimaz page goes all the way to the Kercha processing station and varieties 74112 and 74111 — more than most LA cafes bother with. The bar splits manual brew two ways, an Everyday pour-over and a Rare lot, so the better coffee is a line item rather than an occasion.
The coffee
Own-roast in small batches in Downtown LA, with genuine origin detail on the Ethiopia Guji Kalimaz (Kercha processing station, 74112 and 74111 varieties, 1,900–2,200 meters, washed), though no roast date appears on the web pages.
Manual brew is split into an Everyday pour-over at $6 and a Rare lot at $8, with Hario V60 Aura, Switch, and Pegasus gear sold at the register. The bar often runs on a single barista.
