A roastery compound with a tasting room led by a Brewers Cup champion
Curator’s note
Quat roasts in the building and keeps five single origins on the filter bar at once, each named down to farm, process and varietal. Atelier Q sits in the same compound with a handful of seats and a four-cup tasting course taught by Esther Kim, who took the 2026 US Brewers Cup.
The coffee
Five single origins on filter at a time from the house roaster — two Ethiopias, a washed SL28 Kenya Kiangoi AA, and geishas from Costa Rica Don Senel and Panama Elida Aguacate.
Quat is a compound rather than a counter: a cafe, a retail shelf, a roasting room, and Atelier Q, a tasting bar built for a guided four-cup course, all under one Glassell Park roof. AJ Kim and Scott Sohn put the roaster and the tasting bar a few steps apart, which is not a walk most cafes can offer.
