Curator’s note

Eight years of buying from one grower is the sort of thing that shows up in the cup and nowhere in the branding, and at Sightglass it is the reason to walk past the produce and the wine list to reach the bar. The Morrisons have been gone since 2024, so what gets poured now is the standard they left behind.

The coffee

Roasting happens on site on dual mid-century Probat machines under Director of Coffee Joseph Towery, and the single-origin list names farm and producer down to Colombia's Finca Alcatraz, where an eight-year relationship with grower Wilfredo Ule Vargas produced a Cup of Excellence finalist Pink Bourbon lot. The V60 pour-over is prepared cup by cup alongside espresso built on the house Owl's Howl blend, and bags carry a printed roast date, roasted to order.

Seth Boor of Boor Projects built the room around a hand-patinated copper bar and concrete floors stained a custom crimson, referencing old Hollywood, Mario Bellini's sculptural furniture, and Adolf Loos' Cafe Museum in Vienna. The room holds up to 150 guests across several zones plus a patio, the company's first dedicated outdoor space.
