Eight single origins listed down to farm, varietal, altitude and process, one of them off Portillo's own family land outside Santa Ana — and all of them roasted to order on an air roaster guests can stand and watch. He calls the cracks by ear, the way the mechanic he trained as would.
The coffee
Eight single origins and no blend, each carrying farm, varietal, altitude and process, including a natural Bourbon and Caturra off the founder's own family land outside Santa Ana.
Francisco Portillo kept Lord Windsor's checkered floor and built the rest of the L-shaped room around his own story: counters with coffee beans suspended in the wood, walls of coffee-plant photographs and framed burlap sacks the beans shipped in.
