Curator’s note
The product pages follow the coffee down to a three-hectare farm in Puno, which is more paperwork than most roasters put behind a single origin. Phillips would rather serve a well-dialed batch than a pour-over in a retail room and has said so outright, so what this bar offers is espresso and brewed coffee, done without apology.
The coffee
Nine single origins in rotation, roasted in-house on a Giesen W15 every Tuesday, with product pages that name varietal, process, elevation and the individual farm.
Ruthi Daugherty of RAD the Studio designed the Ocean Boulevard room, and the palette comes off the building itself: the salmon, peach, and teal inside are the Cooper Arms' own exterior colors, semi-reinvented on the way in. Thirteen hundred square feet on the ground floor, lit through big ornate windows, with the color doing the heavy lifting.
