One person roasts every bean in the building at Knot Alone, and the filter bar runs a dozen of those coffees at a time, each posted with its process and varietal codes — the Ethiopia Guji Dambo Udo Natural comes annotated down to 74110, 74158, and 74112. Nobody keeps records that granular for decoration; this is a roaster thinking out loud.
The coffee
Everything sold and poured here is roasted on site in small batches and to order, and all twelve listings on the online store were sold out in August 2026; product pages carry origin, lot, varietal, process, roast level, and tasting notes down to varietals 74110, 74158, and 74112 on the Ethiopia Guji Dambo Udo Natural. No roast date is printed on any listing, so freshness rests on the roast-to-order model.
The tasting room attached to this one-person roastery runs dark wood and low light with jazz playing, a Japanese kissaten read that lands closer to a spa than a workshop. It opens four mornings a week, and the lighting alone tells you nobody here expects you to drink standing up.
