A kissaten-inspired slow bar in East Hollywood, roasting its own every Thursday with an Xbloom Studio on brew duty.
Curator’s note
Bryan Choi and Calvin Jung built East Hollywood a kissaten — retro seats, artwork on the walls, tea beside the coffee — and put a roastery behind it that fires every Thursday. The slow bar runs on an Xbloom Studio, and the rotation reaches for Sey and Hydrangea when the house roast rests.
The coffee
The house program is Ondo Roasting Co: farm-named lots like the Yesid Pajoy Washed Gesha and Kenya Ngomano, roasted weekly, with guest roasters rotating through. Espresso, batch brew, pour-over, and cold brew run daily, and the retail bags print the washing station.
