The filter lots are published down to farm, varietal, altitude and harvest window — the Colombia names all three growers at El Rubi. Laura Moeller hand-paints the label on every retail bag, which tells you the scale they are working at.
The coffee
They roast their own, and the origin detail runs deep — the Ethiopia Guji Arsosala is a washed heirloom lot from a single farm, Mr. Ocholo Bedecho's, at 2,200–2,300 masl — though nothing on the store carries a roast date.
Ralph Gentile Architects drew the interior of this corner at Montana and 7th, a practice known for working the seam between indoors and out. Co-owner Laura Moeller is an interior designer herself, and she hand-paints the label on every retail bag — a shop where the design instinct did not stop at the walls.
