Curator’s note

A bar that buys every bean it pours has one way to show it is serious about coffee, and Reverent pushes it further than most roasters do: nothing reaches the board with the producer's name left off. On the Palos Verdes peninsula, where nothing else works this way, that is a quiet sort of stubbornness.

The coffee

No in-house roasting: espresso runs on Loquat's Quat blend, a medium roast from an LA specialty roaster, while the pour-over program is the centerpiece — eight rotating offerings each named with roaster, country, producer and varietal, including Onyx Coffee Lab's Colombia El Jardin Gesha and a Black & White Colombia from Edwin Noreña. Twelve retail bags carry that same level of naming, and very few multi-roaster bars publish at this level.

Reverent pours out of a retail suite on Deep Valley Drive, with no designer's name attached to the fit-out. All the attention here has gone into the cup rather than the walls, which is a fair order to do it in.
