
Alibi Coffee
An independent roaster since 2016, rebuilt on Washington after losing its first room.
Curator’s note
Alibi has roasted its own since 2016, and the bar pours those lots by name: the Colombia Gaitania arrives with its Tolima region and its 1600–2000 masl elevation attached, Caturra all the way down. The room holding it is barely a year old — the first shop was lost to a landlord in 2024 — and the roasting never stopped through the move.
The coffee
Roasting happens in house, sourced through relationships the owners built on the green side — the Colombia Gaitania microlot comes through the importer Direct Origin Trading, named on the product page. Varietal, region, elevation and process are published per lot, but most stop short of a farm name and no listing carries a roast date.
The first Alibi was a DIY 1922 build-out with a salvaged Century Plaza chandelier and lathe counters, and the landlord kept the fixtures when he refused to renew the lease in 2024. Built from scratch a second time on crowdfunded money, this Washington and Raymond room is brick with clean modern finishes, indoor and outdoor seating, and a hand-drawn map of the surrounding neighborhoods on the wall.
