Curator’s note
Ally Walsh and Casey Wojtalewicz started Canyon Coffee as a pop-up in October 2016 and spent six years on pop-ups, wholesale and a subscription business before any storefront. Their first opened in September 2022 on the Echo Park corner locals called Chicken Corner, a spot Wojtalewicz has said he wanted out of respect for its coffee history.

The coffee
Canyon roasts in-house on a Loring S35 Kestrel at its own DTLA facility under Coffee Director James Klapp, sourcing organic and Regenerative Organic Certified coffee through named producer partners rather than anonymous lots. The lineup runs from bright single-origin Ethiopian and Colombian coffees to two house blends and a sugar-cane-process decaf.

Ally Walsh and Casey Wojtalewicz handed the interior to friends Jon and Masa Klein of Klein Agency, whose restaurants around the city run on the same sleek simplicity. The result is a corner room that looks like a ceramics studio lit on 35mm film, with a turntable going and toast on the counter.

The room
Klein Agency built the Echo Park cafe around a limited material palette on purpose: Douglas fir walls and benches, a birch and stone bar, white walls left mostly bare. Wojtalewicz has pointed to Donald Judd's furniture as the touchstone, saying he wanted the same intention and sturdiness in a working coffee bar. The counter sits at 34 inches, open on both sides, so people lean on it and talk to whoever's making their drink instead of standing back from a wall.
