Curator’s note
A man who wires and plumbs his own coffee shop is not usually the same man who turns up on a Honduran farm ten years later, but Saadat Awan has done both, and the through line is that he would rather learn a thing than buy it. He and Janine run Dinosaur Coffee in Silver Lake off the same roast, and the house blend is called Dinocat — about as subtle as they felt like being.
The coffee
Saadat Awan has roasted on a Loring S35 since 2020 and travels to origin himself, including a 2024 visit to producer David Argueta's farm in Honduras. The current single-origin lineup includes a washed Kenya Murang'a from producer Elizabeth Waithera at 1,800 masl, SL28 variety, alongside two house blends, Dinocat Espresso and Cosmic Decaf.
Saadat built the shop himself in 2014 — architecture, furniture, electrical and plumbing — centered on a vintage Faema E61 espresso machine he tracked down in Riverside and had refurbished by LA Brew Techs. The room is a former vintage-clothing storefront on Sunset with benches out front.
