Eightfold Coffee

Eightfold picked one roaster in 2016 and has never reconsidered — every cup here is Heart, out of Portland, while every bar around it rotates guests. Holding a single account for a decade is a position, but the brewed line is a rotating single-origin drip and no pour-over turns up anywhere on the menu.

Heart Roasters of Portland is the exclusive pour and has been since the 2016 opening, with retail running seven single-origin bags named to farm or washing station — Colombia Jorge Morales, Kenya Gichathaini AB, Ethiopia Gerba Dogo Sodu among them — plus the house Stereo Blend. No pour-over or other manual-brew item appears anywhere on the menu or in the product catalog.

Soo Kim came to the room from a design background and made it serene: white brick walls, marble tabletops, wooden benches and a communal table, and big open windows letting the LA sun in. She refused a small footprint on purpose — breathing room, in her words, was the brief.
