Joan and David Leclerc roast everything they pour, and every lot they buy is USDA certified organic and Fair Trade — a narrow lane to run a roastery in, and they have run it since the end of 2016. The catch is the clock: 8AM to noon, weekdays only, so this is a morning you plan rather than one you stumble into.
