Curator’s note

The company's first counter still behaves like a roastery that happens to have a bar attached: six single origins on the pour-over board at once, each printed with region, varietal, process and flavor notes, and retail bags that reach the Ombligon varietal at Peñas Blancas in Acevedo, Huila. The Diedrich has been running behind that board since 2020, and everything worth looking at in this room is printed on the menu.

The coffee

A certified Q-grader, co-founder Leif An, sits over the roasting program, with a Diedrich IR-5 on-site here since 2020 and a Probat P12 carrying brand volume from an Arts District warehouse. The retail shelf holds eight coffees with farm-level product pages, Ethiopia Bishan Wate to Costa Rica Finca Espíritu San Luis, though none prints a roast date, only a freshest-roast shipping guarantee.

White walls, natural light and small architectural moves read closer to a quiet studio than a busy coffee shop, in the register of Korea’s mono-tone cafes — fitting for a company that now keeps a counter in Seoul’s Galleria. Nothing in the room looks accidental, which is a fair description of the Diedrich IR-5 roasting behind it too.
